Haricot Verts with Tomatoes
Okay, green beans with tomatoes just doesn’t sound as fancy haricot verts, but it’s really the same thing. This really is an exciting and easy way to jazz up green beans and bring a bright and colorful side dish to the table.
Ingredients
- 1½ pounds fresh, trimmed green beans
- ½ chopped onion (medium)
- 3 tablespoons olive oil
- 1 can crushed tomatoes
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 pinch cinnamon
- 1 ¼ cups water
Directions
Sauté chopped onion in a pot with olive oil, about 5 minutes. Add trimmed green beans, crushed tomatoes, water, salt, pepper and a pinch of cinnamon. Partially cover and simmer, 30 minutes. Season with additional salt and pepper to taste.
