Many overlook the zucchini fruit (yes, it is a fruit) because they simply do not know many good ways to prepare it. Here is a tasty side dish recipe that utilizes the healthy zucchini. Zucchinis are low in calories, contains a useful amount of nutrients; potassium, vitamin A and manganese. And they're in season!
- 2 large onions, sliced thin
- 4 zucchinis, cut lengthwise then sliced thin
- ½ teaspoon salt
- ½ teaspoon pepper
- ¾ cup breadcrumbs
- ¾ cup Gruyere cheese (you can use Gouda to save $)
- 2 tablespoons flour
- 1 cup milk
Preheat oven to 400 degrees. Sauté 2 large onions, salt, pepper and zucchini in butter about 5 minutes. In a bowl, combine ¾ cup bread crumbs ¾ cup Gruyere cheese and set aside. Sprinkle flour over the vegetables and add 1 cup milk. Pour into a 13x9 baking dish. Top with bread crumb mix and dot with butter. Bake at 400 degrees for approximately 20 minutes.
